On April 14th, 2022, Health Canada’s Food Directorate published the article “Notice of Modification to the List of Permitted Food Enzymes to Enable the Use of Lipase from Mucor circinelloides f. circinelloides AE-LM in Certain Cheeses”.
The document highlights the following key points:
- Approves the use of the lipase from Mucor circinelloides f. circinelloides AE-LM in certain standardized cheeses;
- Use application of the food enzyme in cheddar cheese and (naming the variety) cheese;
- Lipase from other sources is already permitted for use in standardized cheeses;
- Lipase from M. circinelloides f. circinelloides (previous name: Mucor javanicus) is also permitted for use in dairy-based flavoring preparations;
- The food enzyme is intended to be used at a level consistent with Good Manufacturing Practice (GMP);
- Information related to allergenicity, chemistry, microbiology, molecular biology, and toxicology supports the safety of its requested uses.
The regulation is valid from April 14th, 2022, and amends the list of permitted food enzymes.
