On August 7th, 2024, the USDA's Food Safety and Inspection Service (FSIS) proposed a new rule on “Salmonella Framework for Raw Poultry Products”.
The major points proposed are as follows:
- Applies to raw chicken carcasses, chicken parts, comminuted chicken, and comminuted turkey products contaminated with salmonella and serotypes;
- To label raw chicken and turkey as adulterated if they contain Salmonella at or above 10 cfu/mL or g, or specific harmful serotypes such as Enteritidis and Typhimurium;
- To revise the regulation on enhanced microbial monitoring, SPC methods, rehang and post-chill sampling, and electronic record-keeping;
- Poultry products must meet new standards before sale; non-compliant products would be considered adulterated and may need to be recalled;
- The changes aim to reduce Salmonella-related illnesses and improve poultry product safety.
The public consultation is valid till October 7th,2024.
